Students from the first year Culinary Arts Management and Hotel Restaurant Management programs, are competing for top marks this week.
Six teams from the Moncton campus of NBCC are battling it out with their street style food truck concepts.
Instructor Jason Blonde says students will use their test kitchen stations to replicate the conditions of food trucks, with a variety of fare, “We have a team doing nachos, one doing perogies, one doing crepes, burgers, quesadillas, and one for meatball sandwiches and fried pickles.”
Blonde says this competition allows them to apply their skills in a real world situation.
“They came up with the concept themselves, did the menu testing, had to write a business plan, figure out their own logistics. They were each assigned students from our marketing program and out graphic design program to help with marketing, including posters for around the school campus. Part of the their mark is partly based who most successfully runs their foot truck. Five per cent is based on who is the busiest and another five per cent is who has the most profit.”
Meals will be served from 11:30 until 1:30 all this week, and the public is invited to the Moncton campus to come in an make a purchase.
“Come in the front entrance and then follow the noise to the left, you’ll come to our cafeteria. That’s where you’ll find the stations,” Blonde says.
A portion of the profits will be donated to Mother Hubbard’s Cupboard, the campus food bank and the Atlantic Wellness Centre.
