I Ate Dinner on the Ocean Floor in New Brunswick… and Somehow Survived 

There are meals you enjoy. 

There are meals you remember. 

And then there’s Taste the Tides at the Hopewell Rocks — a dinner so ridiculous, so uniquely New Brunswick, that it feels like something someone made up after a few local craft beers. 

The evening starts with a guided tour of the Hopewell Rocks. Now, I’ve been there more times than I can count, but our guide had me learning things I never knew. Did you know the Bay of Fundy has the highest tides in the world, with water levels changing by as much as 16 metres? Twice a day, billions of tonnes of water rush in and out of the bay. It’s basically Mother Nature showing off.  

The famous flowerpot rocks themselves were carved over thousands of years by those massive tides, creating one of the most recognizable natural wonders in Canada.  

But let’s be honest… I wasn’t there for a geology lesson. 

I was there because someone told me I could eat a gourmet meal on the actual ocean floor

And wow. 

As the tour ended, we arrived at what I now consider the greatest dining room in New Brunswick. No walls. No ceiling. Just towering rock formations, the Bay of Fundy surrounding us, and tables set up on the ocean floor itself. It was absolutely surreal. 

The food? Every bit as impressive as the view. 

We started with a beautifully prepared smoked salmon dish that immediately set the tone for the evening. For my main, I chose the steak topped with lobster. Perfectly cooked. Tender, flavourful, and somehow prepared right there on the beach. My wife ordered the lobster boil, which looked like something straight out of a food magazine and tasted even better. 

One thing I loved was how local everything was. The ingredients were local. The wines were local. Even the dishes we ate from were crafted by local artisans. That’s the kind of detail that makes an experience special. 

At $750 for two people, it’s definitely not an everyday dinner. But this isn’t an everyday dinner. 

It’s an experience. 

It’s a story you’ll tell for years. 

And it’s proof that some of the most incredible experiences in Canada are happening right here in our own backyard. 

There are still dates available this season, and if you’re looking for a bucket-list experience without leaving New Brunswick, this might be the best seat in the province. 

Just don’t be late… the dining room disappears twice a day
