The acting Chief Medical Officer of Health, Dr. Jennifer Russell, reminds everyone to be careful preparing food over the holidays to avoid getting sick.
Everyone is encouraged to follow a few simple food safety guidelines such as keeping raw foods separate from cooked foods to avoid cross-contamination and to always wash raw fruits and vegetables in clean water.
Make sure to wash your hands and all cooking or food prep surfaces often to avoid the spread of bacteria.
Keep cold food cold meaning you should never thaw food at room temperature.
The safest way to thaw frozen meat is in the refrigerator. It may take longer but it keeps the meat cooler.
The rule of thumb is to allow 24 hours thawing time for each 4 to 5 pounds in a refrigerator.
